Why go out or call out for pizza when you can throw together your own, just the way you want it… grilled fresh and hot? When it comes to Hawaiian pizza and putting pineapple on pizzas, folks tend to be firmly planted on one side or the other of that debate. Somehow, these pizzas that originated in Canada became “Hawaiian,” perhaps because you’ll often see them topped with Canadian bacon. We don’t know… we just know that pineapple, paired with our savory North Carolina Rays Country Ham is a culinary come-together meant to be! As for the sauce tucked up under this goodness, some prefer traditional tomato sauce… while others like us prefer to jazz things up with a favorite tomato-based barbecue sauce. And the same goes for the cheese. Just make sure you use a good melty cheese… or combination of such. Making pizzas on the grill is fun, and a perfect supper to cook outside to keep the heat out of the kitchen on warm spring and summer eves. Throw your pizzas on the grill and whirl the blender! By the time your frothy cold beverages are in the glass with an umbrella and you’ve donned your grass skirts, your pizzas will be ready to grab off the grill and eat.
To prepare grill for our pizzas:
Use indirect heat for your pizzas to prevent crust from burning.
Gas - Preheat all burners to high and close. When ready to cook pizzas, turn off burner(s) above where you will place pizza and turn others down low. (You can also cook on a preheated sheet pan to avoid burnt crust.)
Place pizza onto hot oiled grate and cover. Pizza will be done in 7-9 minutes, but check after 5 minutes to make sure crust is not burning and cheese/toppings are getting hot and melted. Move about as needed.
Charcoal - Prepare coals. When ready, spread out so you have an area for pizzas not directly over coals and proceed as above.
To make pizza:
Recipe makes 1 full size pizza with store-bought crust (like Boboli) or 2 Naan Bread. Fina Naan in most grocery store deli areas. We used store-bought pizza crust (Boboli)
¼ cup oil
1 teaspoon garlic powder
8 ounces Rays Country Ham slices, finely diced
2 tablespoons butter
5 slices Canadian bacon
8-ounce can pineapple tidbits, drained
1 cup favorite BBQ (or pizza) sauce
1 tablespoon dried Italian Seasoning
2 cups grated melting cheese (we used Swiss)
1 small red onion, thinly sliced
1 small green bell pepper, sliced into thin slivers
1 thinly sliced jalapeno pepper, opt.
Stir garlic powder into oil and brush both sides of pizza crust.
Heat a non-stick skillet over medium-high heat. Cook country ham. Remove half of ham with slotted spoon when tender, after about 2 minutes. Cook remaining ham until they are crispy bits. Remove and add 2 tablespoons of butter to drippings. Cook slices of Canadian bacon and drained pineapple until lightly browned and caramelized.
Combine sauce with tender cooked ham, Italian seasoning and 1 ½ cups of cheese in a bowl. Spread evenly over crust. Scatter with remaining ½ cup of cheese. Top with Canadian bacon, pineapple, onion and bell pepper.
Grill as noted above. When done, slice onto baking pan and scatter with sliced jalapenos, fresh cilantro and crunchy ham bits! Slice and eat while nice and hot.
